An essential tool for every kitchen cut — from butchery to beautifully prepared charcuterie.
The Cuttello is our butchery blade — crafted for the precise, patient work of breaking down meat properly, from primal cuts to beautifully prepared charcuterie.
The 125mm blade is ground to 2.2mm and left semi-flexible — enough give to navigate tight curves around bones and joints, enough spine to keep every cut deliberate. Seam butchery, silverskin, trimming to the muscle: the flex keeps the edge against the bone where a rigid blade would bridge, and the waste bin stays honest as a result.
Households that shoot have a particular use for the Cuttello: it is the knife that turns a carcass in the larder into cuts worth serving. Paired with a Maturin for fish and a Gyuto for the board, it completes the field-to-table chain in matching steel — every stage of the meal, from ground to plate, passing over an Emberleaf edge.
Butchery knives are usually the drabbest tools in the kitchen — bought cheap, worked hard, replaced without sentiment. We think the knife that does the honest work deserves the same materials and finish as the one that carves at the table, and the Cuttello is built accordingly.
Most Cuttellos leave the bench in one of our working stainless steels: RWL-34, a high-chromium stainless with excellent edge retention and corrosion resistance; PMC27, a powder-metallurgy steel with a fine grain that takes a keen edge and asks very little maintenance; or AEB-L, the razor-blade stainless whose fine carbides give a very keen edge with good toughness. Traditionalists can have O1 tool steel — a carbon steel that sharpens to an exceptionally fine edge and rewards a little oil and attention.
For something quietly spectacular, we pattern-weld our own stainless Damascus in-house from RWL-34 and PMC27 — Vinland, Gysinge, Ladder, Odin’s Eye, Thor and a dozen other patterns, each combining high corrosion resistance with exceptional edge retention. On a Cuttello, Damascus turns a working tool into an heirloom without costing it a day’s work.
A Cuttello is built to outlast its first owner. Every knife carries a lifetime warranty against manufacturing defects, is numbered and recorded in the workshop ledger before it leaves the bench, and ships sharpened, papered, signed-for and insured. When one comes back years later for a fresh edge, we can look up exactly when it left and what it was made of.
If this is the pattern, the next step is a conversation — or set out the rest of it first in the design tool, and send us the draft.

Every commission starts from the Cuttello blueprint. Set the steel, handle material, engraving and sheath in the design tool, and we’ll come back with a quote.
